My Favorite Winter Recipe: Tafelspitz Like Grandmother Made It

My grandmother never cooked from a recipe. She looked, smelled, tasted. "The meat will tell you when it's ready," she always said. As a child, I found that strange. Today, I understand exactly what she meant.

For a good Tafelspitz, you need one thing above all: time. The meat has to cook slowly, at low heat, for at least three hours. You start with a good beef broth, root vegetables — carrots, celery, parsley root — and of course chives. Lots of chives.

My grandmother's secret was the apple horseradish. Freshly grated horseradish mixed with a tart apple and a spoonful of sugar. No cream, no vinegar — just those three ingredients. Served with pan-fried potatoes, golden brown and crispy.

Every winter, when the first snow falls, I make her Tafelspitz. Not for the menu — for myself. I stand in the kitchen, steam rising, and for a moment I'm that little girl again, standing on a wooden stool next to her grandmother, watching.
